Keto Slow Cooker Mexican Shredded Beef



This Keto Slow Cooker Mexican Shredded Beef is packed with flavor and perfect for a low-carb diet. The beef is cooked slowly with aromatic spices and vegetables until it's tender and easily shredded. It's a versatile dish that can be served in various ways, such as tacos, salads, or alongside cauliflower rice.

Ingredients:

  • 2 lbs beef chuck roast
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 can 4 oz diced green chilies
  • 1 can 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions:

Put the beef chuck roast at the bottom of a slow cooker

Cover the beef with tomato paste, ground cumin, chili powder, smoked paprika, diced green chilies, diced tomatoes, minced garlic, and crushed green chilies

Season with salt and pepper

To cover the beef with the seasoning mix, mix the ingredients together well

It should be cooked on low for 8 hours or high for 4 to 5 hours, until the beef is soft and can be easily shred with a fork

Once the meat is done, use two forks to shred it right in the slow cooker

The Ballymaloe Burger



There is a delicious burger on the Lower East Side called the Ballymaloe Burger. It has the rich flavors of ground beef and the unique tanginess of Ballymaloe Relish. With just the right amount of seasoning and classic burger toppings, it's a burger experience you won't want to miss!

Ingredients:

  • 1 lb ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup breadcrumbs
  • 1 egg
  • 1/4 cup Ballymaloe Relish
  • Salt and pepper, to taste
  • 4 burger buns
  • Lettuce leaves
  • Tomato slices
  • Cheddar cheese slices
  • Pickles
  • Mayonnaise

Instructions:

Mix the ground beef, chopped onion, minced garlic, breadcrumbs, egg, and Ballymaloe Relish together in a bowl

Sprinkle salt and pepper on top of the mixture and mix it all together well

Make burger patties out of the four equal parts of the mixture

Warm up your grill or pan on the stove by setting it on medium-high heat

The burger patties should be cooked for four to five minutes on each side, or until they are done the way you like them

Put a slice of cheddar cheese on top of each patty to melt in the last minute of cooking

Toast the buns on the grill or in a toaster while the burgers are cooking

Spread mayonnaise on the bottom half of each bun before putting your Ballymaloe Burgers together

On top of the mayo, put a lettuce leaf

Then add a tomato slice, a cheesy burger patty, and pickles

Put the other half of the bun on top and serve hot

Spooky Frankenstein Bars



These spooky Frankenstein bars are cute and easy Halloween treats that kids and adults will love! With a green cookie base, chocolate layer, candy eyes, and white chocolate hair, they're fun to make and perfect for Halloween parties.

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • green food coloring
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • candy eyes
  • black icing gel

Instructions:

Warm the oven up to 350F 175C and grease a 9x13-inch baking pan

Mix the softened butter, white sugar, and brown sugar together in a large bowl until the mixture is smooth

One at a time, add the eggs and beat well after each one

Add the vanilla extract and mix well

Mix the all-purpose flour, baking soda, and salt together in a different bowl

Add the dry ingredients to the wet ones one at a time and mix just until everything is combined

The dough should be green, so add green food coloring and mix it until it's the right Frankenstein green color

Press the cookie dough into the baking pan so that it's spread out evenly

After the oven is hot, bake for 20 to 25 minutes, or until the edges are just beginning to turn golden

Take the bars out of the oven and let them cool all the way in the pan

Use a double boiler or the microwave to melt the semisweet chocolate chips until they are smooth

On top of the bars that have cooled, spread the melted chocolate

To make Frankenstein's eyes, put candy eyes on the bars

Then, use the black icing gel to draw a mouth and scars on top of the chocolate layer

To make Frankenstein's hair, melt the white chocolate chips and drizzle them over the top

Before cutting the bars into squares, let the chocolate set
