Easter Basket Cookies



Create adorable Easter Basket Cookies that are perfect for spring festivities. These colorful cookies feature edible grass, chocolate eggs, and a delightful almond-flavored base.

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 tsp salt
  • Food coloring gels assorted colors
  • Edible grass or shredded coconut
  • Mini chocolate eggs or jelly beans

Instructions:

In a bowl, cream together butter and sugar until smooth

Add the egg, vanilla extract, and almond extract

Mix well

Gradually add flour and salt to the mixture, and mix until a soft dough forms

Divide the dough into portions and add food coloring to each portion to create desired colors

Shape each colored dough into small nest-like shapes on a baking sheet

Bake in a preheated oven at 350F 175C for about 10-12 minutes or until the edges are lightly golden

Let the cookies cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely

Once cooled, fill the center of each cookie with edible grass or shredded coconut to resemble a nest

Place mini chocolate eggs or jelly beans on top of the grass or coconut in each nest

Allow the cookies to set before serving or packaging
